Vendor Cart Environmental Requirements
Keeping the environment clean is everyone’s responsibility!
Dispose of grease and waste properly
Catch all grease drippings
- Capture on-site in a drip can
- Keep grease from dripping on the ground
- Put it in a grease drum at the commissary
- Wash everything at the commissary in a sink with a grease trap
- Clean the grease trap regularly so it doesn’t plug up, and dispose of waste grease in the grease drum
Keep the area clean
Throw out all trash
- If possible, have a separate container for recyclable materials:
cans and plastic bottles - Clean up drips and spills immediately
- Wipe area down daily with a mild soap or degreaser
- Keep a chlorine bleach solution available for cleaning the rags
Protect storm drains
Discharge of any materials to the storm drain is a violation of law
and may result in large penalties.
All wash water must be returned to the commissary and poured down the sanitary sewer (sink or toilet)
Nothing can go into the gutters except rain water! These drains go directly into the river and cannot be polluted.
