Queso Fresco Food Safety

Queso fresco that is not made properly can cause severe disease (such as salmonella and listeria) especially in young children, the elderly and pregnant women.

In pregnant women, salmonella can cause miscarriage, premature birth, or stillbirth.

In babies, it can cause blood and brain infections.

You can protect your family from disease if you buy and eat only queso fresco that has been made from pasteurized milk and has been refrigerated at all times.

People can still enjoy home-made queso fresco if they follow a recipe that uses pasteurized milk, such as the Abuela Proyecto Recipe (116 KB) that was developed by a group of Hispanic grandmothers.
